Looks like Mac OS X supports your plotter through gimp-print which is the default driver for older printers. Search Apple Tiger support for older print drivers or gimp-printers. As a workaround (maybe temporary) Export As in HD as *.plt file. Assuming you kept your windows/plotter setup you then open and plot the file via autocad.

I wonder whether you could use a generic parallel/serial plot driver for the mac/HP marriage?

Look under the Edit menu commands. There are Arragement toosl. Also you could use a specific sheet (exmaple named hatch) to place all your hatching. Then move this sheet under the sheets that you want to be displayed on top

I found a few copy crash issues in 1.4 too. I believe that 1.4.1 beta is trying to address some of these, but its not that stable either.
